3 Recipes for Low-Iron Babes


As a low iron babe myself, I know the struggle of keeping those iron levels up. But fear not – we've got you covered with three delicious and nutritious recipes that will give your iron levels a boost and leave you feeling fabulous.


1. Sesame Kale Salad with Tofu:
Ingredients:

  • Fresh kale leaves
  • Olive oil
  • Salt
  • Red cabbage, thinly sliced
  • Carrots, grated
  • Cucumber, sliced
  • Firm tofu, cubed
  • Sesame seeds, toasted
  • Sesame oil
  • Rice vinegar
  • Soy sauce
  • Honey

Instructions:

  1. Massage kale leaves with olive oil and a pinch of salt to soften them.
  2. Add sliced red cabbage, grated carrots, and sliced cucumber to the bowl.
  3. Top with crispy baked tofu cubes and toasted sesame seeds.
  4. Prepare a dressing by mixing sesame oil, rice vinegar, soy sauce, and honey.
  5. Drizzle the dressing over the salad and toss everything together.


2. Black Bean and Sweet Potato Enchiladas:
Ingredients:

  • Sweet potatoes, diced
  • Olive oil
  • Smoked paprika
  • Cumin
  • Onion, diced
  • Bell peppers, diced
  • Garlic, minced
  • Canned black beans
  • Diced tomatoes
  • Chili powder
  • Corn tortillas
  • Enchilada sauce
  • Shredded cheese
  • Greek yogurt (optional)
  • Fresh cilantro (optional)

Instructions:

  1. Roast diced sweet potatoes with olive oil, smoked paprika, and cumin until tender.
  2. Sauté diced onion, bell peppers, and garlic until softened.
  3. Add black beans, diced tomatoes, and cooked sweet potatoes to the skillet. Season with chili powder and cumin.
  4. Spoon the filling onto corn tortillas, roll them up, and place them seam-side down in a baking dish.
  5. Pour enchilada sauce over the top, sprinkle with shredded cheese, and bake until bubbly and golden brown.
  6. Serve hot with a dollop of Greek yogurt and fresh cilantro, if desired.


3. Beef and Broccoli Stir-Fry:

Ingredients:

  • 250g beef steak, thinly sliced
  • 2 cups broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and grated ginger, sauté for 1 minute.
  2. Add thinly sliced beef to the skillet and cook until browned.
  3. Stir in broccoli florets and soy sauce. Cook until the broccoli is tender-crisp and the beef is cooked through.
  4. Serve hot over rice or noodles for a satisfying and iron-rich meal.
